Healthy Travel Snack: 4-Ingredient Banana Oatmeal Cookies

We love the idea of a healthy(ish) cookie, especially one that is easy to make, satisfying, and travels well! Whether you're on the road or stuck at home, these versatile cookies can be enjoyed as a quick breakfast or tasty snack.

The ingredients are also pretty flexible – if you want to make them even healthier, feel free to omit the peanut butter and/or chocolate chips. The proportions below make a chewy cookie, but you can also play around with the banana to oatmeal ratio to find your perfect consistency.

  • 2 overripe bananas, mashed
  • 1 cup oatmeal
  • 2 tablespoons peanut butter
  • 1/3 cup chocolate chips

Preheat oven to 350F. Mix all ingredients together in mixing bowl. Form into 12 tablespoon-size scoops on cookie sheet. Use a fork or spatula to flatten the cookies to your desired thickness (these cookies won't spread much in the oven). Bake 12-15 minutes. Enjoy!
